Nourishing Nettle Soup

Recipe:

  • Butter/margarine
  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1/2 tsp sugar
  • 2 cups young nettle leaves, chopped
  • 1 1/2 cups soup stock (veggie, mushroom or chicken)
  • 1/2 cup milk or alternative
  • Seasonings (salt, pepper, nutmeg)
  1. Melt butter or margarine in a medium sauce pan over medium heat.  Add in chopped onion and cook until caramelized.
  2. Add in chopped garlic, sugar, and young chopped nettle leaves and cook until the leaves are tender.
  3. Add in soup stock and bring to a boil.  Cook for 2-3 minutes.
  4. Reduce heat and add in your milk (or alternative) and seasonings.  Freshly grated nutmeg is excellent if you have access to it.
  5. Simmer for a few minutes and then serve!
