A Soup of Remembrance

Recently we lost a cherished friend and avid supporter of our channel. Her support and encouragement helped Deepwoods Dietitian come into existence. She was very much in our thoughts when we filmed this episode, and we wanted to pay tribute to her beautiful spirit as we create a simple yet comforting soup recipe.

This video also reflects on a past culinary challenges, as this dish is a slightly revised version of a request for a recipe celebrating Canada's 150th anniversary with dietitians across the country. In this version, we have the inclusion of truly wild and free Canadian mushrooms we picked last summer, infusing our soup with a unique depth of flavour.

Original Recipe: Celebrate Canadian Food: In the Kitchen with Canada's Dietitians

This version:

  • 1 oz (28 g) wild mushroom pieces, dried 
  • 6 cups water or broth
  • 2/3 cup wild rice, rinsed
  • 1 Tbsp curry powder (spice mix)
  • 1 cup green peas, frozen
  • 2 Tbsp soy sauce
  • Optional garnish - green onion, chives, toasted sesame seeds
  1. In a large pot combine 28g (1 oz) of dried mushrooms, 6 cups of water or broth, 2/3 cup of wild rice, and 1 Tbsp of curry powder.
  2. Bring it to boil, reduce heat to low and let simmer for 40 minutes.
  3. Add 1 cup of frozen peas and 2 Tbsp of soy sauce.  Heat until warmed through.
  4. Garnish as desired & enjoy!
