Nourishing Nettle Soup

Recipe:
- Butter/margarine
 - 1 onion, chopped
 - 1 garlic clove, chopped
 - 1/2 tsp sugar
 - 2 cups young nettle leaves, chopped
 - 1 1/2 cups soup stock (veggie, mushroom or chicken)
 - 1/2 cup milk or alternative
 - Seasonings (salt, pepper, nutmeg)
 
- Melt butter or margarine in a medium sauce pan over medium heat. Add in chopped onion and cook until caramelized.
 - Add in chopped garlic, sugar, and young chopped nettle leaves and cook until the leaves are tender.
 - Add in soup stock and bring to a boil. Cook for 2-3 minutes.
 - Reduce heat and add in your milk (or alternative) and seasonings. Freshly grated nutmeg is excellent if you have access to it.
 - Simmer for a few minutes and then serve!
